A Culinary Exploration From Sydney 

Bills, the all-day dining restaurant from Sydney, Australia, is currently offering its Spring-Summer 2026 menu across all eight locations in Japan. The theme is “Culinary Exploration from Sydney,” a place where diverse influences blend seamlessly. 
 
Inspired by multicultural flavors, seasonal Japanese ingredients and the simple joys of everyday life, each dish is a thoughtful fusion that celebrates the restaurant’s Sydney roots and Japan’s local produce. 
 
The menu includes a light and refreshing small plate of white crab and radish salad, along with watercress and green sansho pepper. There’s also a sesame and buckwheat flatbread with chive feta, chili oil, cucumber, zucchini and mitsuba.  
 
The grilled mackerel, summer tomatoes, jammy egg, seri, spring onion and Xinjiang spice is a Japanese breakfast staple with a Bills twist. Seasoned with cumin and fennel seed, this dish is inspired by the flavours of Xinjiang and Central Asia. 
 
For beverages, the oolong fizz, with aperol and oolong tea, lemongrass and prosecco, embraces the global tea-tail trend that artfully blends tea with spirits. There’s also a new addition to the restaurant’s house wine selection: Bills’ house Orange Arinto Malvasia by Delinquente.
