Sushi “Sakura” has recently revamped its menu to feature domestic fresh bluefin tuna (nama hon-maguro) in all lunch and dinner courses year-round.
Unlike the majority of tuna served globally, which is frozen immediately after catch, fresh tuna is transported under strict refrigeration without ever being frozen. This preservation method maintains the fish’s natural elasticity, a smooth, velvety texture and a profound, lingering umami that is unique to domestic, near-shore catches.
To maximize the character of every ingredient, Sushi “Sakura” uses four distinct types of shari, each crafted from a carefully selected variety of vinegar: three types of red vinegar and one type of white vinegar. By precisely adjusting the acidity and depth of each shari to complement specific seasonal toppings, the hotel’s chefs ensure a bespoke pairing and ultimate harmony in every bite.
Guests can enjoy these delicacies at a traditional sukiya-style cypress (hinoki) counter. The restaurant offers a tranquil atmosphere with floor-to-ceiling views of a meticulously maintained Japanese garden that changes with the seasons.
