The Italian Regions series at Le Pristine Restaurant Tokyo continues this May and June, turning to the sun-drenched regions of Tuscany and Liguria.
Interpreted by Michelin-starred chef Sergio Herman, the menu reflects Italy’s deep appreciation for quality ingredients, balancing Tuscany’s rustic cucina povera – a cuisine rooted in simplicity, where richly flavored vegetables, beans and cheeses are transformed into deeply satisfying, ingredient-driven dishes.
In contrast, Liguria, known for its stunning coastline including the Cinque Terre, is defined by its geography between sea and mountains. Its cuisine is light and Mediterranean in character, highlighting fragrant herbs such as basil, fresh vegetables, olive oil and seafood.
In this course, Chef Sergio Herman explores a shared philosophy between these regions: a deep respect for ingredients. Rather than relying on elaborate techniques, the menu places vegetables and herbs at its core, drawing out purity and harmony to create a light, early summer dining experience.
Highlights include Zucchini Carpaccio, Cannelloni Pesto Genovese and Japanese Akaushi Beef. The course menu, which captures the essence of an Italian summer in the heart of Tokyo, is paired with regional wines curated by Executive Sommelier Satoru Mori.
