To celebrate its 10th anniversary, bills (stylized as bills) Ginza is offering a special dinner course for one month from October 1, 2026, showcasing exceptional ingredients and producers from across Japan.
The course begins with a gougère made with Majyakuri, a richly aged hard cheese from pioneering farmstead cheesemaker Yoshida Farm in Okayama. Guests can choose between two entrées: roasted Hokkaido scallops with house-made ginger butter and glass noodles, inspired by Australia’s Chinese culinary culture, or crostini topped with whipped tofu, ginkgo nuts and Daikoku shimeji mushrooms.
For the main course, options include grilled Kofuku Pork from Fukudome Farm in Kagoshima, served with caramelized spring onion and a house-made sake-miso sauce, or Hiruzen Jersey ricotta and sourdough gnocchi with tsuruna and porcini mushrooms, inspired by Tuscan cuisine.
Dessert is either warm red date pudding with mandarin caramel butter or bills’ signature ricotta pancakes. A Japanese wine pairing, carefully selected to complement the dishes, is also available, highlighting the diversity of Japan’s regional wines.
