Tetsuya Kobayashi, President of Tokyo’s Imperial Hotel is celebrating the decoration of the hotel’s Chef du Cuisine, Thierry Voisin with the Chevalier dans l’Ordre du Merite Agricole, by the Government of France. The award was presented to Voisin for his special distinction in services to agriculture by French Ambassador to Japan Philippe Faure at a ceremony in the hotel (pictured above).
Thierry Voisin was named chef du cuisine at The Imperial’s award-winning, Michelin-starred Les Saisons in 2005.
He joined Imperial Hotel, Ltd. after a 17 year stint at Gerard Boyer’s three Michelin-starred Les Crayeres in Reims.
The Chevalier dans l’Ordre du Merite Agricole, dating from 1883, incorporates a leek and ribbon motif with a red-orange stripe down each side, the stripes symbolizing the prestigious institution of France’s Ordre National de la Légion d’Honneur.
Voisin was scouted after a ¥600 million re-opening of Les Saisons, part of a ¥17 billion five year renovation in preparation for the hotel’s 120th Anniversary in 2010.
Chef Voisin is now offering Les Saisons’ patrons a special menu celebrating his decoration, in progress through July 19th, and featuring marinated Mount Fuji trout with peach and basil; sauteed langoustine and rhubarb, tomato-scented sauce with mustard; sautéed alfoncino fish and squid with freshly emulsified herbs; roasted filet of beef tournedoes Marie-Louise style with stuffed artichoke and rich onion puree with truffle sauce; “Rose de Reims” biscuit mousse with red berries in juice and champagne sherbet; with coffee and original chocolates, at ¥23,000 per person plus a ten percent service charge.
