Special Exhibition Washoku: Nature and Culture in Japanese Cuisine *Canceled*

This exhibition explores how Japanese cuisine developed to take advantage of the wide range of ingredients naturally available in the fields, mountains and waters of the Japanese archipelago, and art techniques such as fermentation that allowed both preservation and a greater variety of tastes and preparation options. Exhibits also follow the introduction of foreign ingredients and dishes, which continues to influence the evolution of washoku
today.

Washoku is traditional Japanese cuisine. Ever since it was recognized in 2013 by UNESCO as an Intangible Cultural Heritage, interest in Japan’s traditional diet and cuisine has been growing all around the world. Accordingly, the National Museum of Nature and Science in Tokyo has organized a special exhibition about washoku.
