From the 27th floor of Sanno Park Tower, Shunju (which most appropriately means ‘spring and autumn’) provides stunning views over the city and appetizing modern Japanese cuisine in a dimly lit, minimalist setting with a beautifully proportioned open kitchen. Designed and owned by the renowned Takashi Sugimoto—he of the legendary Super Potato firm this restaurant gives the best seasonal produce and traditional ingredients a modern twist. The organic vegetables with beef carpaccio plays on the Japanese fondness for excessively rare meat and the kunsei shinyasai (seasonal vegetables) smoked over cherry chips is a creatively flavourful offering.
